Normalise them onto the same scope first, because the price gap is usually exclusions rather than value.

Then: what each one leaves out and would charge as an extra. Anything odd in the payment terms, particularly a large deposit up front. Whether the cheapest is cheap for a reason.

End with the questions to put to each of them and what I should have in writing before anyone starts.
